Simple Vegan Carrot Croquettes Recipe by NappyHeadVegan
Since relocating to Baltimore, I have been surrounded by people that have a great love for crab cakes and salmon cakes. So I came up with a simple alternative to share with my friends and family. It’s very simple. Give it a try!!
8 regular size carrots, sliced 1/4 inch thick
2 1/4 finely crushed toasted breadcrumbs, divided
1 stalk of celery, chopped
1 mini orange pepper, chopped
2 tbsps Old Bay Seasoning
1 tsp cumin
1 tbsp Bragg’s Liquid Aminos
2 tbsps mustard
Rinse and slice carrots. Boil carrots for 45 mins or until soft.
Drain water from carrots.
Place carrots in a large bowel and mash.
Add 1 cup of bread crumbs, celery, pepper, Old Bay seasoning, cumin, Bragg’s and mustard to carrots and mix until blended.
Put in 1 1/4 bread crumbs in a shallow bowl.
Scoop out 2 tbsps of carrot mix to form 1 1/2 inch croquette with your hands.
Place each formed croquette into breadcrumb bowl and cover with crumbs (one at a time).
Place croquettes on parchment paper or cookie sheet.
In a large skillet let 2 tbsps of olive oil heat and add croquettes.
Let croquettes brown on each side.
Let cool and pair with your desired side dishes.
